Kitchen Sink Rigatoni

        You can make this dish substituting just about anything to adjust to your family’s liking.  Don’t be afraid… you really can’t screw this up.

1 lb. Mini Rigatoni
2 Tbsp. butter
1 medium onion, diced
3 cloves garlic (or 1tsp. minced garlic from a jar)
1 med. Yellow (or green, or red) pepper, diced
1 lb. ground chourico (or Italian sausage)
14.5 oz. can diced tomatoes
8 oz can tomato sauce
½ c. Marsala wine or water (I use wine... obviously!)
1 Tbsp. parsley flakes
½ c. Ricotta cheese
Salt & Pepper

Cook pasta while preparing sauce:

Melt butter in large skillet.  Add onion, garlic and pepper.  Cook until onion is translucent.  Add chourico, diced tomatoes, tomato sauce, Marsala wine, parsley flakes and salt & pepper  (to taste).  Cook until hot and bubbling, stirring occasionally.  Remove from heat.  Stir in ricotta cheese until blended.  Pour over pasta and toss to coat.

*    If sauce is too thick, just add a little water (or more Marsala) to thin it out.

Slow Cooker Beef Burgundy

This is a perfect, no fuss, winter dish!

1 Lb. Stew meat, or any preferred beef, cut into 1" cubes
1 c. +/- red wine (I use Merlot)
1 can beef gravy (I've also used cream of chicken soup... very yummy!)
1 med. onion, sliced thin
3 garlic cloves, minced (or 1 tsp. minced garlic from a jar)
1 tsp. Allspice
1 tsp. Parsley flakes
1 large Bay Leaf
Salt & Pepper (as always, I use a generous amount)

Mix everything together in a slow cooker.  Cook on low for 8 - 10 hours.
Serve over creamy mashed potatoes with a side of crisp sugarsnap peas.

Many people like their Beef Burgundy with mushrooms.  Unfortunately, my family won't go near them.  If you love mushrooms, like I do, substitute the can of beef gravy with a can of cream of mushroom soup and add a can of sliced mushrooms.  Or better yet, add a cup of your favorite fresh mushroom.

Chicken, Broccoli, and Ziti in a Garlic Cream Sauce

1 Lb. Ziti, cooked
2 Boneless, skinless chicken breasts, boiled and cut into 1" pieces
1 10-12 oz bag frozen broccoli flowerettes*
1 Red bell pepper, cut into strips
3 Tbsp Butter
6 garlic cloves, chopped (or 1 Tbsp. jarred, minced garlic)
3 chicken bouillon cubes
1 1/2 c water
1 c half & half**
1/2 c Parmesan cheese
Fresh ground pepper

Steam broccoli and red pepper until cooked, but crisp.
Saute garlic in butter in a large skillet.  Add water and bouillon cubes and fresh ground pepper, to taste (I like a lot!)  Add half & half and Parmesan cheese.  Heat through, but do not boil.  Remove from heat.  Combine all ingredients.  Enjoy!

*   Substitute any frozen vegetable.  Chopped spinach is especially yummy!
** Heavy cream will work, too, making the sauce thicker.  Whole milk is fine in a pinch, but the sauce will be thinner.

Yummy snack...

Spinach & Mozzarella Muffins... (aka: mini Quiche)

6 eggs
2/3 c. half & half (or 3/4 c. heavy cream if you have it)
2 cups shredded Mozzarella Cheese
dash or two of cayenne pepper
*10 - 12 oz. frozen, chopped spinach, thawed

Beat eggs.  Add other ingredients.
Pour into well greased mini muffin tins.
Bake at 350' for 25 -30 minutes, or until tops are golden brown.
Cool on wire rack for 10 minutes.  Carefully remove from pan.
Serve warm or at room temperature.
Makes approximately 24 mini muffins.

* other suggestions:
3/4 c. chourico and peppers
10 oz. frozen broccoli, thawed
1/2 lb. crisp, crumbled bacon
3/4 c. diced ham

These are great to make for parties!

Last night's supper...

Sausage & Cheddar Balls w/Fire Roasted Tomatoes

1 28 oz. can crushed tomatoes (or puree)
1 14.5 oz. can fire roasted diced tomatoes
1 tsp. brown sugar
1 lb. ground sweet Italian sausage
1/2 c. panko crumbs
1/4 c. Parmesan cheese
1 tsp. red pepper flakes
1 egg
1 c. shredded cheddar cheese
2 c. Pasta (use a hearty pasta, like Radiatore, Rigatoni or Rotelle)

In a large saucepan, heat the crushed tomatoes, fire roasted tomatoes, brown sugar, salt & pepper (per taste) over medium/low heat.  Let simmer while preparing the sausage balls.

Combine sausage, panko, Parmesan, red pepper flakes, egg, cheddar cheese, salt & pepper.  Mix until just blended.  Roll into balls and add to saucepan.  Cover and simmer 30 - 45 minutes, until sausage is cooked through. 
While sausage balls are cooking, make pasta.  Cook until ALMOST al dente.  The pasta is going to absorb the sauce and soften. (...and you don't want mushy pasta!!)
When sausage is thoroughly cooked, add pasta to pot and carefully stir. 
Viola! Dinner is served.

This is what was for supper tonight...

Chicken in a Lemon Pepper Glaze over Rice

2 large chicken breasts, sliced into 4 equal strips each
1/2 cup flour
1/2 cup +/- olive oil
1 lemon
1 cup dry white wine
1 chicken bouillon cube
1 cup water
fresh ground black pepper
1 tsp. dried parsley flakes
Rice pilaf

Heavily season flour with salt and pepper.  Dredge chicken in flour mixture.  Brown in olive oil in a large skillet over medium/high heat.  Remove from skillet and sprinkle with fresh ground pepper according to taste (I go heavy on the pepper).  Add a cup of water to skillet and whisk in the wine, parsley flakes and bouillon cube.  Return chicken to skillet and continue cooking over medium heat until sauce reduces to a glaze and chicken is cooked through. While chicken is cooking, cut lemon in half.  Cut one half of the lemon into thin slices, removing any seeds.  During the last few minutes of cooking, add lemon slices to skillet and squeeze the other half of the lemon onto the chicken.  Serve over rice.

Rice Pilaf

3 Tbs. butter
1/2 cup Orzo
1 cup rice
2 cups water
3 chicken bouillon cubes

Melt butter in large saucepan.  Add orzo and cook until light brown in color, stirring constantly.  Add rice.  Stir in water and bouillon cubes.  When water begins to boil, cover pot and simmer until rice is fluffy and dry (approx. 20 min.)
Chicken Lo-Mein

8 oz. spaghetti or linquine
2 boneless, skinless chicken breast, cut into 1” pieces
2 carrots, cut julienne style
2 celery hearts, cut
1 medium onion, cut
1 cup frozen/fresh snow peas or Italian style green beans
1 cup cashews or sliced water chestnuts
1 Tbsp minced garlic
Peanut Butter Sauce (see below)

Boil water to make 8 oz spaghetti or linguine.  Cook until al dente.

Sautee all ingredients in ½ cup oil until cooked through.  Stir often.

Add pasta to chicken mixture.  Top with sauce.  Toss until well blended.

Peanut Butter Sauce
Heat 2 Tbsp EACH: Soy Sauce, Sugar, Creamy peanut butter in microwave for 45 seconds.  Wisk until well blended.  Use immediately.

** I like all of my food dripping in sauce, so I usually double the sauce recipe so that I will have extra for those who want it (like me!)

Men will put anything in their mouths... except vegetables.

White Chicken Chili

1 boneless, skinless chicken breast
1 can Creamed Corn
1 (small) can Salsa Verde
1 chicken Bouillon cube
½ cup half & half
1 ½ tsp. Allspice
1 cup shredded Monterrey Jack or Mexican-Blend cheese
Sour cream
Corn chips

Boil chicken breast until tender. 
Remove to plate; do not discard water.
When cool, shred with a fork into bite size pieces. 
Reserve 1 cup of water in pan; add bouillon cube.  Stir until dissolved. 
Add creamed corn and Salsa Verde.  Stir until blended.
Add chicken and Allspice.  Simmer until slightly reduced (about 10 minutes). 
Add half & half and shredded cheese.  Stir until blended.
Serve with a dollop of sour cream and a handful of crushed corn chips on top.
(I also like to add a sprinkling of the shredded cheese on top to make it look a little more "gourmet".)

Serves 2 – 4.

If the chili is too spicy for your taste buds just add a little more half & half to cool it down.  (You can also use 1/2 can of Salsa Verde and gradually increase to taste.)  If you are looking to kick up the heat, use Pepper Jack cheese in place of the milder shredded cheese.

Meat pie recipe

The Best (and Easiest) Meat Pie Ever!

2 refrigerated, ready to use pie crusts
1 cup hot water
2 chicken bouillon cubes
½ lb. ground beef
½ lb. ground pork
½ cup (more or less) fine bread crumbs
1 tsp. black pepper

Heat oven to 425’.

Prepare 9” pie-plate with 1 refrigerated pie crust.

Dissolve bouillon into 1 cup hot water.

Brown ground beef and pork until no longer pink.  DO NOT DRAIN. 

Slowly stir in the bread crumbs, using just enough to absorb whatever juices are left from the meat.  Add the pepper.

Pour meat mixture into uncooked pie shell.  Slowly pour bouillon broth over meat mixture.  Cover with top crust and crimp the edges closed, as directed on the package.

Cut slits into top of the crust.
Place the top crust on before you add the broth.  Cut a small hole in the middle of the crust (about the size of a nickel) and pour the broth through the opening.  Don’t worry about getting broth on the uncooked pie crust…  it will actually add some flavor and make the crust perfectly brown and crispy!

Bake for approximately 30 minutes or until crust is golden brown.
